Works for me Wednesday

Cake Truffle Recipe (Warning---very good and addictive!)

2cups of Crumbled Cake (finely crumbled with mixer)
2 Tbsp. of Powdered Sugar
2 Tbsp. of Cocoa Powder (depends on flavor of cake)
Small amount of your choice of Flavored liquid coffee creamer. (I use French Vanilla mostly) Use only enough to bind everything together.
1/4 cup of chopped nuts, miniture chocolate chips, toffee bites, etc. (pick only one)

Mix all ingredients together with mixer and then roll into balls or use small cookie scoop and place on Parchement paper lined sheet pans. Place in freezer until frozen. Then you can dip in chocolate or leave frozen and place in ziploc bag to dip later.

This recipe is great for leftover cake, just scrape off icing and put cake in the freezer to mix up when you have time. The drier the cake is, the better the truffles will be. You can even take a bad cake and make these delicious.

Some flavors I have tried are Red Velvet with pecans dipped in Vanilla candy melts, Chocolate with toffee bites, Chocolate with cream cheese added to make Chocolate Cheese cake.
