Works for Me Cake Edition #2



Since I promised Cake tips for the month, here goes. I can't remember what all I was going to post about. I do have a great, easy Ice cream cake recipe.

Brownie mix

1/2 gallon ice cream

Large container of cool-whip

Gallon Ice cream bucket empty

First you need to brownie mix that makes a 9x13 pan of brownies. Divide the batter between 3 8" round cake pans. Make the Cake-like brownies and preferably without chocolate chunks in them. They get really hard when frozen. You will also need an empty 1 gallon ice cream bucket. This is very important. Also you will need 1/2 gallon of any flavor ice cream softened.

Stack the ice cream and brownie as follow in bucket. Brownie, half the ice cream, brownie, the rest of the ice cream , brownie. Now add the lid to the bucket and freeze solid. When you are ready and the cake is frozen solid for at least 5 hours or so. Take lid off bucket, turn upside down on cake and pop out. If it won't come out use a butter knife to loosen. Then smooth cool-whip all over and decorate with candy, etc.

My preference is to use a ice-cream that does not have large chunks of things in it. Such as Butterfinger, or just Blue Bunny Chocolate chip.
