One of my favorite Breakfast Recipes

This is a recipe that I came up with using a cookie recipe. We have this often because it's easy, can be made the night before and cook the next morning and it's delicious. We get tired of the same things for breakfast around here so it's nice that I can even change this up to make it different.

Oatmeal bars
1 cup Applesauce 1tsp baking soda
1 cup brown sugar 1 tsp cinnamon (if using)
1/3 cup regular sugar 1/2 tsp salt
2 eggs 4 1/2 cups of oatmeal
1 tsp vanilla 1cup raisins or chocolate chips

Mix applesauce (may substitute 1/3 cup coconut oil for 1/3 cup of applesauce and it will make them crumbly and yum) , sugars, eggs and vanilla. Stir in oatmeal, baking soda, salt, cinnamon and chocolate or raisins. Dump into greased 9x13 pan and bake at 350 for 30 min.

Now the variations: If you use old fashioned oatmeal they will be very crumbly, some coconut oil also makes them crumble. I love them this way in a bowl with milk. If you want breakfast bars then all applesauce and quick oats makes them hold together better.
Chocolate chips makes them so very yummy! It's our favorite way!
Please don't add cinnamon with the chocolate because that would just be gross.

Coconut oil is very good for you and very delicious. I linked to my favorite brand. Also you can add in Flaxseed and substitute about 1/2 cup for 1/2 c. of oats.
