Works for Me!



Healthy, YUMMY Pancakes

Here is a recipe I discovered and altered for Delicious Pancakes that actually stick with you a while. We now have pancakes about 2x a week because they are no longer unhealthy.

This recipe is taken from Betty Crocker's Healthy New Choices cookbook and altered slightly.

1/2 cup oatmeal (you can grind it to a flour in the blender for smoother pancakes)

1/4 cup all purpose flour

1/4 cup whole wheat flour

3/4 cup buttermilk

1/4 cup of skim milk

2 egg whites or one egg

1 tablespoon of sugar

3 tablespoons of milled flaxseed ( purchase at wal-mart)

1 tablespoon of oil

1 teaspoon of baking powder

1/2 teaspoon of baking soda

1/2 teaspoon of salt

Whisk together until smooth and cook.
