Healthy, YUMMY Pancakes

Here is a recipe I discovered and altered for Delicious Pancakes that actually stick with you a while. We now have pancakes about 2x a week because they are no longer unhealthy.

This recipe is taken from Betty Crocker's Healthy New Choices cookbook and altered slightly.

1/2 cup oatmeal (you can grind it to a flour in the blender for smoother pancakes)

1/4 cup all purpose flour

1/4 cup whole wheat flour

3/4 cup buttermilk

1/4 cup of skim milk

2 egg whites or one egg

1 tablespoon of sugar

3 tablespoons of milled flaxseed ( purchase at wal-mart)

1 tablespoon of oil

1 teaspoon of baking powder

1/2 teaspoon of baking soda

1/2 teaspoon of salt

Whisk together until smooth and cook.

Random Things about Me:
1. I met and married my husband in 6 months!
2. I love him way more now than I did then.
3.I love to read but hate to read the same thing twice. Even kids books. It takes effort to read something over and over.
4. My kids favorite book and also one of the few books that I don't mind reading again is How do Dinosaurs say Goodnight byJane Yolen and Mark Teague.
5. Our house is for sale and we are planning to build again.
6. I hate going to the dentist!!!!!
7. My favorite Ice cream is Edy's slow churned French Silk Ice cream. It is mocha chocolate with dark chocolate chunks. Yum!!!!
8. I have Dial-up Internet. We are supposed to get high speed soon but hopefully our house will sell and we'll move to a high-speed area!

Happy Mother's day to all you moms out there!!!!

Long overdue

Well, this time I'm not talking about a baby, but this post is overdue. It is already May 12!!!! I'm just running out of hours in my days to do things. This week sadly the Midwife bill in AL was voted down by committee. I am looking forward to next year when we try again. Hopefully with more people and interest in this bill. Here are some pictures of friends who came to stay for a short time. Our kids had the best time together. We look forward to seeing them again soon.
